I find the game terribly boring by myself, but the multiplayer server stuff with friends has been amazing. I'm hoping the server update, whenever that hits, fixes the issue because I was just getting into the game.

Watching Coe's livestream of his little server that's for him and his friends showed this to be the case. Nothing quite like seeing a sea of 20+ creepers near your base. ;)
Putting the server on peaceful would not be a solution however. The big fun factor for me is doing your building, harvesting, exploration, etc under the ever present chance you're going to be jumped by a spider/creeper/otherbaddy.
And yeah, I wouldn't participate in a multiplayer server where people can just do the various load commands to get whatever they want. You might as well just play creative at that point.
On the other hand, I do play creative single player now and then since it's the only version I can currently run on the current computer. I load it up now and then just to get a feeling for the controls.
